I’d never tried celeriac root before. After making this, I used celeriac root as a
substitute for potatoes in another dish, but for that, I had to add an acidic food
(unsweetened yogurt) to buffer the bitterness of the root.
This might be a great recipe for a taro root soup too. And makes me wonder
about a vegan celeriac root pirogi…
